Toast for breakfast or a snack is so quick and easy. I am all about exotic and ethnic foods and trying new recipes. But sometimes I just want something familiar and simple that I can throw together in a few minutes. That’s why I love these vegan toasts. The number of toppings that can be added to toast is limitless. Be creative and invite the kids to make their own toasts too!

My favorite brand of bread to use is Scharr. It does have a bit of honey in it, but the taste is so worth it. And, since it is almost impossible to find gluten free bread that is also vegan because all of it contains egg, this is the cleanest and best version I have found.

Cooking Time: 5 minutes

Yield: 1-2 pieces of toast per person, depending on bread size

For each of the toasts, layer up the ingredients from top to bottom on warm, toasty bread.

Apple Cinnamon Toast

Heavy smear almond butter

Sliced apple

Sprinkle cinnamon

Sprinkle sliced almonds

Hummus Avocado Toast

Dollop of hummus

1/2 avocado

Salt and pepper

Crushed red pepper flakes

Mushroom Toast

Handful shiitake, cremini, button, or portobello mushrooms, stems removed, sliced

Smear vegan sour cream (or vegan cream cheese, if preferred) 

Sprinkle chia seeds

Fresh parsley, removed from stem and chopped

Banana Dark Chocolate Toast

Heavy smear cashew butter

Sliced banana

Sprinkle dark chocolate chips

Drizzle yacon syrup or vegan chocolate syrup

Mango Coconut Butter Toast

Smear coconut butter

Sliced mango

Squeeze lime

Sprinkle coconut flakes

Fig Pistachio Cream Cheese Toast

Heavy smear vegan cream cheese 

Dried or fresh figs, cut into quarters, eighths, or minced 

Sprinkle chopped pistachios

Drizzle agave nectar
